North Indians relish recipes made with cottage cheese. It is their answer to the requirement of delicious proteins. Cottage cheese in India is known as paneer. It can either be made at home or bought from the dairies. Given here is a popular paneer recipe:
The ingredients:
(The Spinach puree)
2 bunches of chopped spinach
½ bunch of methi leaves
3 tomatoes
4-5 green chillies
5-6 cloves of garlic
Finely chopped ginger
Put all the abovementioned ingredients into a blender, add water as per requirement, preparing a puree.
(The seasoning)
1 finely chopped onion
1 teaspoon red chilli powder
1 teaspoon cumin powder
1 teaspoon dhania powder
Salt to taste
Oil
½ kilo fried paneer cubes
First heat oil in a hollow cooking dish and then cook the onions till golden brown. Add the spice powders and salt and stir for a few minutes. Then add the puree to this and let all the spices blend in. Finally add the cubes of paneer and leave to simmer for ten minutes.
